STRAWBERRY SHORTCAKE CUPCAKES



INGREDIENTS
For the cupcakes
  • 1 cup butter, softened
  • 2 cups granulated sugar
  • 4 eggs, room temperature
  • 1 teaspoon vanilla
  • 2 and ¾ cups all purpose flour
  • 2 teaspoons baking powder
  • 1 cup milk, room temperature
For the Buttercream
  • 1 cup (2 sticks) butter, softened
  • 3 and ½ cups powdered sugar
  • 2-4 tablespoons heavy cream or milk
  • 1 teaspoon vanilla
  • pinch of salt
For the Strawberry filling
  • 3-4 cups finely diced strawberries
  • 1 tablespoon granulated sugar
