- 1 pound medium shrimp, peeled nd deveined

- 1 onion, diced
- 1 red bell pepper, diced
- 1 tblespoon freshly grted ginger
- 2 tblespoon red curry pste
- 1 (12-ounce) cn unsweetened coconut milk
- 3 cups vegetble stock
- Juice of 1 lime
- 2 tblespoons chopped fresh cilntro leves
DIRECTIONS:
